I’m inspired to write a post about food! Food isn’t cleaning, but we have to keep a clean kitchen and that connects with food so here we go.
In the spirit of cutting back the budget and opting for more cost effective ways to eat, I thought this would be an appropriate thing to write about. I was talking to a friend the other day about what to do with cold, cooked potatoes. And then it occurred to me that this is a resistant starch, as well as cold rice! I must write about this.
Potatoes are pretty boring. So is rice. Potatoes are a rough topic to write a blog post about but I care about health, and I know we all stand in our kitchen sometimes, staring at our pantry items totally clueless about what to make. So the next time you’re staring at your bag of rice or potatoes, think about this: if you make too much food, and have some left over for tomorrow, you will have healthy and gut friendly leftovers you can feel good about eating.
Rice and potatoes are both super starchy. But when they are cooked, and then cooled down in the fridge, they become a resistant starch! Resistant starches feed your belly with good bacteria. The starch becomes a resistant starch when it is left to cool for about 12 hours. When these foods are cold – rice or potatoes, they don’t spike your glucose. The way I understand it is the starches bypass your digestion and feed on your gut bacteria instead!
Now we can enjoy the humble, cold potato, or cold rice, with a bit more enthusiasm. This is so exciting!
So if you want to keep your blood sugar in check, or are just health conscious in general, eating some cold rice or cold potatoes (or adding them to recipes that call for them cold) can make your belly happy, and your guests, too! Just in time for summer!
